World's Best Chicken


Serves 4-6 people

4-6 Chicken Thighs
1/2 cup Dijon Mustard
1/4 cup Maple Syrup
1 Tablespoon Red Wine Vinegar
2 tsp. Rosemary 
Salt & Pepper

Trim fat off your chicken thighs. (Don't worry about getting all the fat off. Chicken thighs are really fatty, but they are so cheap! They are perfect for the crock-pot because the fat melts off of them and by the time they are done they fall right off the bone.) You can substitute for chicken breasts if you prefer, but I have made them both ways and thighs always taste better in the crock-pot.(I used chicken breast and they were great!) Dump all ingredients into your freezer bags. 

When ready to use, thaw bag just enough to dump into crock-pot. Cook on low for 8 hours. Serve with rice.

Slow Cooker Lime Chicken

This was super yummy too. It smelled really good too and made my tummy rubble all day.

Slow Cooker Lime Chicken
24 oz fat free salsa
2 Tbsp fresh lime juice
1/4 c. cilantro, chopped
1 small jalapeno pepper, chopped (and seeded for milder heat)
4 breasts uncooked boneless skinless chicken breasts
1 1/4 oz. Taco Seasoning, Original (one package)

Instructions: Put all ingredients in a gallon freezer bag. Thaw the day before. Cook on low for 6 hours. Serve the chicken with the salsa mixture spooned over the top. Add a bit of sour cream on top with some crushed tortilla chips. This is also delicious as taco filling or in a taco salad.

Taco Soup

I really liked this version of Taco Soup. I made mine the morning of and stuck it in the crockpot but you could freeze it as well.

Taco Soup
15 oz. canned kidney beans
15 oz. canned white corn
1 medium uncooked onion, chopped
1 pound cooked 95% lean ground beef
8 oz. canned tomato sauce
1 oz. Taco Seasoning, Original (1 packet)

Directions: Brown the hamburger with taco seasoning and onions. Put in crockpot and add other ingredients.  Cook on low for 4 hours. Serve with cheese, sour cream and chips.

Cilantro Lime Chicken with Corn and Black Beans

I think was one of my favorites from the 1st month's recipes. Very delicious, healthy and fresh tasting.

Cilantro Lime Chicken w/ Corn and Black Beans
Ingredients:
1 1/2 pounds chicken breasts
Juice from 2 limes

1 bunch fresh cilantro, chopped
1 (16 oz) bag frozen corn
 
2 minced garlic cloves
 
1/2 red onion, chopped

1 can black beans, drained and rinsed
 
1 tsp cumin
 
salt and pepper to taste
Directions: 
Place all ingredients in a resealable gallon-sized freezer bag. Mix together and zip bag closed.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 8 hours (or HIGH for 4 hours). 
Serve with tortillas and toppings such as with sour cream, guacamole, salsa, and cheese.

Chicken Cacciatore

To be honest, I wasn't sure this was going to be good but it turned out better than expected! I'm sure it has to do with your spaghetti sauce as well. I think we used a Prego brand but I'm not an expert on spaghetti sauces. My kids liked it too. I think I would have added a little more chicken too, there was a lot of sauce leftover.

Chicken Cacciatore
Ingredients:
1 lb chicken breasts
1 (26 oz) jar of chunky vegetable-style spaghetti sauce
1 zucchini, chopped
1 green pepper, chopped
1 sweet onion, chopped
Directions:
Place all ingredients in a resealable gallon-sized freezer bag and mix together.
Garnish: chopped black olives, shredded Parm cheese, salt and pepper to taste.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 6-8 hours. 
Serve with cooked spaghetti noodles or rice and garnish with olives and cheese. Also would be delicious with Cheesy Garlic Sticks.


Chicken Broccoli Alfredo

This was ok although both Emily and I thought it didn't have the best texture after freezing and then slow cooking. The Alfredo sauce seemed to fall apart. We may have to tweak this recipe to do better in the crockpot. I might try it again without freezing. It is pretty darn easy and can be thrown in the crockpot in no time.

Chicken Broccoli Alfredo
Ingredients:
1 ½ pounds chicken breasts
1 (16 oz) bag frozen broccoli florets
2 (16 oz) jars Alfredo sauce (I use light)
1 large green pepper, chopped
1 (4 oz) can sliced mushrooms, drained
Directions:
Place all ingredients in a resealable gallon-sized freezer bag and mix together.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 4-6 hours. 
Serve with cooked fettuccine noodles, green salad, and Easy Parmesan Knots.

Slow Cooker BBQ Spareribs

A lot of our first month's recipes came from Six Sisters Stuff. They were all pretty tasty but some we liked more than others.

The BBQ ribs were very tasty and liked by most in my family, which is saying a lot with the picky kids. Definitely making again. It is easy to use the leftovers for sandwiches, wraps or on salads.

Slow Cooker BBQ Spareribs
Ingredients:
1-2 lbs of country-style pork ribs
1 1/2 cups ketchup
1 1/2 Tablespoons seasoned salt
1/2 teaspoon liquid smoke
1/2 cup brown sugar
1/2 cup white vinegar
Directions:
Place pork in resealable gallon-sized freezer bag. Mix remaining ingredients together in a bowl and pour over pork. Mix together in bag and zip closed.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on HIGH for 3-4 hours or LOW for 6-7 hours.
